Ingredients
- 1 Whole head cauliflower, divided
- 1 Cup sour cream
- 1 Cup Cheddar cheese, shredded
- 0.5 Cup cornflakes, crushed
- 0.25 Cup green bell pepper, minced
- 0.25 Cup red bell pepper, minced
- 1 Teaspoon (tsp) salt
- 0.25 Cup Parmesan cheese, grated
- 1 Pinch paprika, seasoned
Steps
- Preheat the oven to 325 degrees F (165 degrees C). Grease a 2-quart baking dish.
- Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring to a boil. Add cauliflower; cover and steam until crisp-tender, about 5 minutes. Drain and set aside.
- In a medium bowl, combine sour cream, Cheddar cheese, cornflakes, bell peppers, and salt. Stir in the steamed cauliflower, then transfer to the prepared baking dish.
- Sprinkle the mixture with Parmesan cheese and paprika.
- Bake uncovered in the preheated oven until heated through, about 30 to 35 minutes.
