Ingredients
- 4 Pieces skinless, boneless chicken breast halves, cooked and chopped
- 6 Ounces (oz) egg noodles, cooked and drained
- 10.5 Ounces (oz) can condensed cream of mushroom soup
- 10.5 Ounces (oz) can condensed cream of chicken soup
- 1 Cup sour cream
- 1 Pinch salt, to taste
- 1 Pinch ground black pepper, to taste
- 0.5 Cup butter, melted
- 1 Cup crumbled buttery round crackers
Steps
- Preheat the oven to 350°F (175°C).
- Fill a large pot with water and bring to a simmer over medium heat. Add the chicken and poach until no longer pink in the center, about 12 minutes. Remove the chicken with a slotted spoon and set aside.
- Bring the chicken cooking water to a boil. Add the egg noodles and cook until tender with a slight bite, about 10 minutes. Drain the noodles.
- Transfer the noodles to a large bowl. Cut the chicken into bite-size pieces and mix with the noodles.
- In a separate bowl, mix together the condensed cream of mushroom soup, condensed cream of chicken soup, and sour cream. Season with salt and pepper. Add this mixture to the chicken and noodles, stirring gently to combine. Transfer to a 2-quart baking dish.
- Melt the butter in a small saucepan over low heat, then remove from heat. Stir in the crumbled crackers.
- Sprinkle the cracker mixture over the top of the casserole.
- Bake in the preheated oven until heated through and browned on top, about 30 minutes.
