Serving Size: 2
Cooking Time: 40 minutes
Ingredients
- 1 Cup uncooked white rice
- 2 Cups water
- 2 Tablespoons (tbsp) rice vinegar
- 1 Teaspoon (tsp) salt
- 2 Sheets nori seaweed
- 0.25 Whole cucumber, peeled and sliced
- 2 Pieces imitation crab legs
- 1.5 Ounces (oz) cream cheese, sliced
- 1 Teaspoon (tsp) fresh ginger root, minced
Steps
- Gather all ingredients and prepare your workspace.
- In a saucepan, bring the rice and water to a boil over high heat. Once boiling, reduce the heat to medium-low, cover, and simmer for 20 to 25 minutes until the rice is tender and the water is absorbed.
- Stir in the rice vinegar and salt into the cooked rice. Allow the rice to cool completely to room temperature.
- Lay out the nori sheets on a clean, dry surface. Moisten your hands with water to prevent sticking, then spread the cooled rice evenly over each nori sheet, leaving a 1/2-inch gap along one edge.
- Arrange the cucumber slices, imitation crab, and cream cheese in a straight line on top of the rice, opposite the gap.
- Carefully roll the sushi from the side with the toppings towards the exposed edge of the nori, using gentle pressure to keep the roll tight.
- With a sharp, wet knife, slice each roll into 5 or 6 pieces.
- Serve the sushi rolls with minced ginger on the side, and enjoy your homemade sushi experience!
