Ingredients
- 1 Cup white sugar
- 0.5 Cup all-purpose flour
- 0.5 Teaspoon salt
- 2 Cups milk
- 3 Egg yolks, whisked
- 0.25 Cup butter, melted
- 0.25 Cup lemon juice
- 1.5 Teaspoons lemon zest, zested
- 0.5 Cup sour cream
- 1 9-Inch pie crust, baked
Steps
- In a saucepan, combine sugar, flour, and salt. Gradually stir in milk. Cook and stir over medium heat until the mixture thickens and becomes bubbly. Reduce the heat and continue to cook and stir for an additional 2 minutes. Remove from heat.
- Slightly beat the egg yolks. Gradually stir 1 cup of the hot custard mixture into the yolks. Return the yolk mixture to the saucepan with the remaining custard. Bring to a gentle boil, cooking and stirring for another 2 minutes. Remove from heat and stir in butter, lemon juice, and lemon zest. Fold in the sour cream.
- Pour the filling into the baked pie shell. Chill until set.
