- 3 Pounds (lb) red potatoes
- 1 Tablespoon (tbsp) kosher salt
- 1.5 Cups half-and-half
- 0.5 Cups butter, melted
- 0.5 Cups sour cream
- 2 Teaspoons (tsp) kosher salt
- 1 Teaspoon (tsp) black pepper, ground
Steps
- Place the red potatoes and 1 tablespoon of kosher salt into a large pot. Cover with water and bring to a boil. Reduce the heat to medium-low, cover, and simmer until the potatoes are tender, about 25 to 35 minutes. Drain and transfer the potatoes to a large bowl.
- In a small saucepan, mix the half-and-half and butter over medium-low heat until heated through and the butter is melted, about 5 to 10 minutes.
- Using an electric hand mixer, blend the potatoes in the large bowl until mashed. Slowly pour 3/4 of the cream-butter mixture into the mashed potatoes, mixing on the lowest speed until fully incorporated.
- Fold in the remaining 1/4 of the cream-butter mixture and the sour cream. Season with 2 teaspoons of kosher salt and ground black pepper. Serve warm.
