Ingredients
- 1 Small onion, minced
- 2 Whole garlic cloves, minced
- 1 Tablespoon (tbsp) vegetable oil
- 3 Tablespoons (tbsp) water
- 1 Pint (pt) part-skim ricotta cheese
- 1 Pound (lb) firm tofu, crumbled
- 0.25 Cups Parmesan cheese, grated
- 1.5 Pounds (lb) fresh spinach, drained
- 2 Large egg whites, whisked
- 0.25 Teaspoons (tsp) black pepper, ground
- 2.5 Tablespoons (tbsp) fresh parsley, minced
- 8 Whole lasagna noodles
- 6 Ounces (oz) mozzarella cheese, shredded
- 6 Cups tomato sauce
Steps
- Preheat your oven to 350 degrees F (175 degrees C).
- Cook the lasagna noodles according to the package directions. Drain and set aside.
- In a skillet, sauté the minced onion and garlic in vegetable oil, adding water as needed to prevent sticking.
- In a large bowl, combine the ricotta cheese, crumbled tofu, grated Parmesan cheese, drained spinach, whisked egg whites, ground black pepper, minced parsley, and the sautéed onion and garlic. Mix well.
- Spray a 9 x 13 inch casserole dish with cooking spray. Arrange a layer of cooked noodles on the bottom. Top with 1/3 of the ricotta mixture, 1/3 of the shredded mozzarella, and 1/3 of the tomato sauce. Repeat the layers twice more, ending with a layer of tomato sauce.
- Cover the dish with foil and bake in the preheated oven for 40 minutes.
- Remove the foil and bake for an additional 10 to 15 minutes, until the top is bubbly and golden.
- Let the lasagna cool for a few minutes before serving. Enjoy!
