Ingredients

  • 1 3 Ounces (oz) package lemon flavored Jell-O® mix
  • 1 3 Ounces (oz) package lime flavored Jell-O® mix
  • 4 Cups boiling water
  • 1 Tablespoon (tbsp) apple cider vinegar
  • 2 Stalks celery, sliced
  • 0.5 Cups pimento-stuffed green olives, sliced
  • 2 Medium carrots, grated

Steps

  1. In a large bowl, combine the lemon gelatin mix, lime gelatin mix, and boiling water. Stir until the gelatin is completely dissolved.
  2. Add the apple cider vinegar to the gelatin mixture, cover the bowl, and refrigerate for about 1 hour until the mixture thickens but is not fully set.
  3. Once the gelatin is thickened, stir in the sliced celery, pimento-stuffed olives, and grated carrots, ensuring they are evenly distributed.
  4. Pour the mixture into a 1-quart mold and refrigerate for at least 3 hours until firm.
  5. To serve, carefully unmold the salad onto a plate and enjoy the refreshing, crunchy delight.
