Ingredients

  • 1 Whole cucumber, peeled
  • 1 Small red onion, sliced
  • 0.33 Cups fresh dill, minced
  • 1 Whole garlic clove, divided
  • 2 Tablespoons (tbsp) white sugar
  • 1 Teaspoon (tsp) salt
  • 1 Whole ripe avocado, peeled
  • 0.25 Cups red wine vinegar

Steps

  1. In a mixing bowl, combine the cucumber, red onion, dill, garlic, sugar, and salt. Toss the ingredients together until well mixed.
  2. Refrigerate the mixture for 20 minutes to allow the flavors to meld.
  3. After 20 minutes, gently toss the avocado with the cucumber mixture.
  4. Return the mixture to the refrigerator for an additional 10 minutes.
  5. Remove the salad from the refrigerator and drain any excess liquid. Discard the garlic pieces.
  6. Toss the salad again with the red wine vinegar to add a tangy finish.
  7. Serve immediately or keep chilled until ready to enjoy.
