Ingredients

  • 6 Slices bacon, crumbled
  • 0.33 Cups apple cider vinegar
  • 0.75 Cups white sugar
  • 0.5 Medium red onion, minced
  • 0.5 Teaspoons dry mustard powder
  • 0.25 Teaspoons salt
  • 0.5 Cups vegetable oil
  • 1 Teaspoon poppy seeds
  • 10 Cups romaine lettuce leaves, torn
  • 1 10 Ounces can mandarin orange segments, drained
  • 0.25 Cups almonds, toasted, slivered

Steps

  1. Place the bacon in a large, deep skillet. Cook over medium-high heat until evenly browned. Drain, crumble, and set aside.
  2. In a blender, combine the apple cider vinegar, white sugar, red onion, mustard powder, and salt. Cover and puree on high until smooth.
  3. Reduce the blender speed to medium-low and slowly pour in the vegetable oil, blending until the dressing is creamy. Stir in the poppy seeds and set aside.
  4. In a large bowl, toss the romaine lettuce with the crumbled bacon, mandarin oranges, and enough dressing to moisten.
  5. Serve the salad on plates and sprinkle with toasted slivered almonds. Enjoy!
