Ingredients

  • 3 Ounces (oz) baby shrimp
  • 3 Ounces (oz) skinless, boneless chicken pieces, sliced
  • 1 Whole egg
  • 4 Tablespoons (tbsp) cornstarch
  • 4 Cups vegetable oil
  • 3 Cups chicken broth
  • 1 Ounce (oz) mushrooms, minced
  • 2 Tablespoons (tbsp) water chestnuts, minced
  • 0.125 Cups bamboo shoots, diced
  • 0.33 Cups fresh green beans, sliced
  • 0.5 Teaspoons (tsp) salt
  • 1 Tablespoon (tbsp) sherry
  • 0.67 Cups uncooked white rice

Steps

  1. Mix together the shrimp, chicken, egg, and cornstarch until well combined.
  2. Heat 3 cups of vegetable oil in a wok. Once hot, add the shrimp and chicken mixture. Cook for 30 seconds and then drain.
  3. In a pot, combine the cooked shrimp and chicken mixture with chicken broth, mushrooms, water chestnuts, bamboo shoots, and green beans. Bring to a boil.
  4. Add salt and sherry to the pot. Return to a boil, then reduce heat and allow to simmer.
  5. Meanwhile, heat the remaining 1 cup of oil until hot. Add the uncooked rice and brown quickly. Drain and add the rice to the soup.
  6. Serve hot and enjoy the unique texture and flavors of this sizzling rice soup.
