Ingredients

  • 2 Cups (c) peanut oil
  • 1 Pound (lb) shrimp, peeled
  • 0.25 Cups (c) cornstarch
  • 2 Large garlic cloves, minced
  • 0.5 Teaspoons (tsp) fresh ginger, minced
  • 0.5 Teaspoons (tsp) cayenne pepper
  • 0.25 Cups (c) water
  • 5 Teaspoons (tsp) white sugar
  • 1 Tablespoon (tbsp) white wine
  • 1 Tablespoon (tbsp) white vinegar
  • 1 Tablespoon (tbsp) ketchup
  • 0.5 Teaspoons (tsp) salt
  • 2 Teaspoons (tsp) cornstarch
  • 2 Teaspoons (tsp) water
  • 5 Green onions, sliced

Steps

  1. Heat the peanut oil in a wok to 375 degrees F (190 degrees C).
  2. Toss the shrimp with 0.25 cups of cornstarch to coat evenly. Carefully lower the shrimp into the hot oil and fry until golden brown, about 45 seconds. Drain on paper towels and set aside.
  3. Remove and discard all but 1 tablespoon of oil from the wok. Add the minced garlic, ginger, and cayenne pepper to the wok. Cook, stirring continuously, until the garlic is fragrant, about 30 seconds.
  4. Add 0.25 cups of water, sugar, white wine, vinegar, ketchup, and salt to the wok. Bring the mixture to a boil over high heat.
  5. In a small bowl, dissolve 2 teaspoons of cornstarch in 2 teaspoons of water. Stir this mixture into the boiling sauce until it thickens, about 1 minute.
  6. Add the fried shrimp and sliced green onions to the wok. Toss everything together to coat the shrimp evenly with the sauce.
