Serving Size: 10
Cooking Time: 170 minutes
Ingredients
- 3 Pounds (lb) bone-in chicken breast halves
- 1 Whole onion, sliced
- 1 Cup chopped celery, minced
- 1 Cup water
- 1 Cup dry white wine
- 1.5 Teaspoons (tsp) salt
- 1 Teaspoon (tsp) curry powder
- 2 6 Ounces (oz) packages long grain and wild rice mix
- 2 Tablespoons (tbsp) butter
- 1 16 Ounces (oz) can sliced mushrooms, drained
- 1 10.5 Ounces (oz) can condensed cream of mushroom soup
- 1 Cup sour cream
Steps
- In a large pot, place the chicken breasts along with the sliced onion, minced celery, water, white wine, salt, and curry powder. Bring to a boil, then reduce the heat to low. Cover and simmer for 1 hour.
- Remove the pot from heat and strain the broth, reserving it. Allow the chicken to cool enough to handle, then remove the meat from the bones and cut it into bite-sized pieces. Set aside.
- Measure the reserved broth and add water as needed to make 4 1/4 cups. Pour this into a medium saucepan, add the butter, and stir well. Bring to a boil, then reduce the heat to medium-low. Cover and simmer until the liquid is absorbed, about 20 minutes. Remove from heat.
- Preheat your oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
- In a large bowl, combine the cooked chicken, cooked rice, and drained mushrooms. Stir in the condensed cream of mushroom soup and sour cream until well mixed.
- Spoon the mixture into the prepared baking dish.
- Bake in the preheated oven for about 1 hour, or until the casserole is hot and bubbly.
- Let the casserole rest for a few minutes before serving to allow the flavors to meld together.
