Ingredients

  • 3 Cups cake flour
  • 1 Tablespoon baking powder
  • 0.75 Teaspoons salt
  • 0.75 Pounds unsalted butter, melted
  • 3 Cups packed light brown sugar
  • 3 Large eggs, whisked
  • 1 Tablespoon vanilla extract

Steps

  1. Preheat your oven to 325°F (163°C) and adjust the oven rack to the lowest position. Spray a 9-by-13-inch baking pan with vegetable cooking spray. Line the pan with a 12-by-18-inch piece of heavy-duty foil, leaving an overhang to use as handles later. Coat the foil with cooking spray.
  2. In a small bowl, sift together the cake flour, baking powder, and salt. In a large pan, melt the butter and combine with the packed brown sugar, heating until bubbling hot.
  3. In a large bowl, whisk the eggs and vanilla extract. Slowly whisk in the hot sugar mixture, followed by the dry ingredients. If using add-ins like chocolate, let the batter cool slightly before stirring them in.
  4. Pour the batter into the prepared pan and bake for about 45 minutes, or until the blondies are just set. Remove from the oven and let cool for five minutes.
