- 7 Strips bacon, minced
- 1 Tablespoon (tbsp) butter
- 1 Large onion, sliced
- 0.25 Cups white wine
- 2 Tablespoons (tbsp) crème fraîche
- 8 Ounces (oz) round Reblochon cheese
- 1 Pinch salt, to taste
- 1 Pinch ground black pepper, to taste

- Prepare Potatoes: Bring a large pot of salted water to a boil over high heat. Add the sliced potatoes, reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for 1 to 2 minutes.
- Preheat Oven: Set your oven to 425 degrees F (220 degrees C). Grease an 8-inch square baking dish with butter or non-stick spray.
- Cook Bacon and Onions: In a skillet over medium-high heat, cook the minced bacon until crispy, about 5 minutes. Transfer the bacon to a plate lined with paper towels to drain excess grease.
