  • 2 Cups (c) red wine
  • 1 Whole bay leaf
  • 3 Tablespoons (tbsp) fresh parsley, divided
  • 0.5 Teaspoon (tsp) dried thyme
  • 6 Ounces (oz) fresh mushrooms, sliced
  • 1 Cup (c) beef broth
  • 1 Cup (c) pearl onions, peeled

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. In a small bowl, mix the flour, 1 pinch salt, and ground black pepper. Coat the beef cubes thoroughly with this mixture.
  3. In a large skillet, melt the butter over medium-high heat. Add the coated beef cubes and brown them well on all sides. Transfer the browned meat to a 2-quart casserole dish.
  4. In the same skillet, add the minced onion, carrots, and minced garlic. Sauté for 5-10 minutes until the onion is tender and translucent.
