Ingredients
- 0.25 Cups (c) all-purpose flour
- 1 Pinch salt, to taste
- 0.5 Teaspoon (tsp) ground black pepper
- 2 Pounds (lbs) stew meat, cubed
- 4 Tablespoons (tbsp) butter
- 1 Large onion, minced
- 2 Large carrots, minced
- 2 Cloves garlic, minced
- 2 Cups (c) red wine
- 1 Whole bay leaf
- 3 Tablespoons (tbsp) fresh parsley, divided
- 0.5 Teaspoon (tsp) dried thyme
- 6 Ounces (oz) fresh mushrooms, sliced
- 1 Cup (c) beef broth
- 1 Cup (c) pearl onions, peeled
Steps
- Preheat your oven to 350 degrees F (175 degrees C).
- In a small bowl, mix the flour, 1 pinch salt, and ground black pepper. Coat the beef cubes thoroughly with this mixture.
- In a large skillet, melt the butter over medium-high heat. Add the coated beef cubes and brown them well on all sides. Transfer the browned meat to a 2-quart casserole dish.
- In the same skillet, add the minced onion, carrots, and minced garlic. Sauté for 5-10 minutes until the onion is tender and translucent.
- Pour in the red wine, add the bay leaf, 2 tablespoons of the fresh parsley, thyme, and beef broth. Stir well, scraping up any browned bits from the bottom of the skillet.
- Add the sliced mushrooms and peeled pearl onions to the skillet, and bring the mixture to a simmer.
- Pour the wine and vegetable mixture over the beef in the casserole dish. Cover the dish with a lid or aluminum foil.
- Bake in the preheated oven for 2.5 hours.
- Remove the cover, stir gently, and bake for an additional 30 minutes to allow the sauce to thicken and the flavors to meld.
- Garnish with the remaining tablespoon of fresh parsley before serving. Enjoy your gourmet Beef Bourguignon with a side of creamy mashed potatoes or crusty bread.
