Ingredients

  • 3 Whole russet potatoes, peeled
  • 2 Tablespoons (tbsp) vegetable oil
  • 0.5 Cups chopped onion, minced
  • 2 Tablespoons (tbsp) all-purpose flour
  • 1 Teaspoon (tsp) prepared mustard
  • 0.33 Teaspoon (tsp) salt
  • 0.25 Teaspoon (tsp) celery seeds
  • 0.5 Cups water
  • 2 Tablespoons (tbsp) apple cider vinegar
  • 0.5 Cups green bell pepper, chopped
  • 0.25 Cups carrots, shredded
  • 0.5 Teaspoon (tsp) fresh dill, minced
  • 0.25 Cups Parmesan cheese, grated

Steps

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. In a large pot, bring salted water to a boil. Add the whole russet potatoes and cook until they are tender but still firm, about 15 to 20 minutes. Drain, let them cool, then peel and slice into ¼-inch-thick slices. Set aside.
  3. In a medium skillet, heat the vegetable oil over medium heat. Add the minced onion and cook until soft. Stir in the flour, prepared mustard, salt, and celery seeds. Gradually add the water and apple cider vinegar, stirring constantly. Cook over low heat until the sauce boils and thickens.
  4. In a large bowl, combine the sliced potatoes, chopped green bell pepper, shredded carrots, and fresh dill. Pour the onion sauce over the mixture and stir until well combined.
  5. Transfer half of the potato mixture into a shallow 8x8-inch baking dish. Sprinkle with half of the grated Parmesan cheese. Add the remaining potato mixture on top and finish with the rest of the Parmesan cheese.
  6. Bake in the preheated oven, uncovered, for 15 to 20 minutes, or until the cheese is melted and the vegetables are heated through.
  7. Serve warm and enjoy the savory blend of flavors in this comforting casserole.
