Ingredients
- 4 Cups all-purpose flour
- 0.5 Cups white sugar
- 1 Cup butter
- 2 Large eggs
- 1 0.25 Ounce (oz) package active dry yeast, packaged
- 0.5 Cups warm water
- 1.5 Cups packed brown sugar
- 1 Cup butter, divided
- 1 Teaspoon (tsp) ground cinnamon
- 6 Tablespoons (tbsp) dark corn syrup
Steps
- Dissolve the active dry yeast in the warm water and set aside.
- In a large bowl, cut 1 cup of butter into the flour. Mix in the white sugar, eggs, and the yeast mixture. Combine well and let the dough rise for 30 to 60 minutes.
- Roll the dough into small balls and bake them in a pizzelle iron until golden brown.
- For the filling, in a saucepan, combine the brown sugar, 1 cup of butter, ground cinnamon, and dark corn syrup. Boil the mixture until it reaches the soft ball stage (234-240 degrees F or 112-115 degrees C).
- Carefully split the baked waffles in half and spread the warm filling on the cut sides. Press the halves back together to form the stroopwafels.
