Ingredients

  • 1.5 Cups white sugar
  • 1 Cup butter, softened
  • 2 Whole eggs
  • 1 Whole egg yolk
  • 10 Drops green food coloring
  • 1 Teaspoon peppermint extract
  • 3.25 Cups all-purpose flour
  • 2 Teaspoons baking powder
  • 1 Teaspoon baking soda
  • 1 Teaspoon cream of tartar
  • 0.5 Teaspoon kosher salt
  • 12 Ounces dark chocolate chips

Steps

  1. In a large bowl, beat the sugar and softened butter with an electric mixer until light and fluffy.
  2. Add the eggs, egg yolk, green food coloring, and peppermint extract to the butter mixture. Beat until smooth.
  3. In a separate bowl, combine the flour, baking powder, baking soda, cream of tartar, and kosher salt.
  4. Gradually mix the dry ingredients into the wet ingredients until the dough comes together.
  5. Fold in the dark chocolate chips. Cover the dough and refrigerate for about 1 hour until firm enough to scoop.
  6. Preheat the oven to 350 degrees F (175 degrees C). Line two baking sheets with parchment paper.
  7. Drop spoonfuls of dough 2 inches apart onto the prepared baking sheets.
  8. Bake in the preheated oven for 8 to 10 minutes, or until the edges are golden.
  9. Allow the cookies to cool on the baking sheet for 1 minute before transferring them to a wire rack to cool completely.
