Serving Size: 3

Cooking Time: 45 minutes

Ingredients

  • 0.75 Pounds (lb) bacon, sliced
  • 1 Cup crumbled feta cheese
  • 6 Tablespoons (tbsp) sour cream
  • 0.125 Tablespoons (tbsp) dried oregano
  • 0.125 Teaspoons (tsp) black pepper, ground
  • 3 4 Ounces (oz) chicken breast, tenderized
  • 1 Cup flour, all-purpose
  • 1 Cup bread crumbs, packaged
  • 2 Large eggs, whisked
  • 4 Whole potatoes, peeled
  • 1 Whole sweet onion, minced
  • 2 Tablespoons (tbsp) butter

Steps

  1. Preheat the oven to 350°F (175°C).
  2. In a large, deep skillet, cook the bacon over medium-high heat until evenly browned but still soft, about 5 to 7 minutes. Transfer to a paper towel-lined plate to cool, reserving the grease in the skillet.
  3. In a small bowl, combine the cooled bacon, feta cheese, 3 tablespoons of sour cream, oregano, and black pepper. Mix well and set aside.
  4. On a clean work surface, lay the chicken breasts flat. Use a sharp knife to cut a 2-inch pocket in each breast. Fill each pocket with the bacon mixture.
  5. Prepare three shallow dishes: one with flour, one with bread crumbs, and one with whisked eggs. Dredge each chicken breast in flour, shake off excess, dip in eggs, and coat with bread crumbs.
  6. Reheat the reserved bacon grease in the skillet over medium heat. Sear the chicken breasts until browned on both sides, about 2 minutes per side. Transfer to a baking dish.
  7. Bake the chicken in the preheated oven until the chicken is cooked through and the filling is hot, about 20 to 25 minutes. Ensure an internal temperature of 165°F (74°C).
  8. While the chicken bakes, place the potatoes in a large pot, cover with salted water, and bring to a boil. Reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain.
  9. In the same skillet, cook the minced onion in the remaining bacon grease over medium heat until very tender and golden brown, about 10 minutes.
  10. In a large bowl, combine the cooked potatoes, caramelized onions, remaining 3 tablespoons of sour cream, and butter. Mash until smooth and creamy.
  11. Serve the stuffed chicken breasts alongside the caramelized onion mashed potatoes for a delightful meal.
