  • 4 Cloves garlic, minced
  • 4 15.5 Ounces (oz) cans black beans, drained
  • 2 15 Ounces (oz) cans crushed tomatoes
  • 6 Tablespoons (tbsp) chili powder
  • 2 Tablespoons (tbsp) dried oregano
  • 2 Tablespoons (tbsp) distilled white vinegar
  • 1 Tablespoon (tbsp) liquid hot pepper sauce
  • 2 Teaspoons (tsp) cumin, ground
  • 2 Teaspoons (tsp) salt
  • 0.5 Teaspoons (tsp) black pepper, ground

Steps

  1. Heat the olive oil in a large skillet over medium-high heat. Add the onions and cook, stirring, until they start to soften.
  2. Add the green bell peppers, red bell peppers, tofu, and garlic to the skillet. Cook and stir until the vegetables are lightly browned and tender, about 10 minutes.
