- 1 Pint (pt) shucked clams, minced
- 1 Cup tomato and clam juice cocktail
- 2 Medium potatoes, diced
- 1 Cup green bell pepper, minced
- 0.25 Cup green onions, minced
- 0.25 Teaspoon (tsp) black pepper, ground
- 1 14.5 Ounces (oz) can Italian-style diced tomatoes
Steps
- Mince the clams, reserving the juice, and set the clams aside. Strain the clam juice to remove any bits of shell. Measure the juice and add enough water to equal 1.5 cups of liquid.
- In a large saucepan, combine the clam juice mixture, tomato and clam juice cocktail, potatoes, bell peppers, green onions, and black pepper. Heat the mixture to a boil.
- Reduce the heat, cover, and simmer for about 15 minutes or until the potatoes are just tender.
- Stir in the undrained Italian-style diced tomatoes and the minced clams. Heat through before serving.
