Ingredients

  • 1 Pound (lb) pork shoulder, divided
  • 2 Tablespoons (tbsp) Mazola® Corn Oil
  • 0.25 Cup yellow onion, minced
  • 2 Whole garlic cloves, minced
  • 1 Tablespoon (tbsp) Spice Islands® Chili Powder
  • 0.25 Teaspoon (tsp) Spice Islands® Chipotle Chile Powder
  • 0.5 Teaspoon (tsp) cumin, ground
  • 0.5 Teaspoon (tsp) coriander, ground
  • 2 Whole tomatillos, minced
  • 0.5 Cup tomatoes, minced
  • 0.25 Cup fresh cilantro, torn
  • 1 Whole lime, juiced
  • 4 Corn tortillas
  • 1 Pinch salt, to taste
  • 1 Pinch pepper, to taste

Steps

  1. Season the pork cubes with salt and pepper.
  2. Heat the corn oil in a large skillet or Dutch oven over medium-high heat. Add the pork cubes and sear until browned on all sides, about 3-5 minutes.
  3. Add the minced onions, minced garlic, chili powder, chipotle chile powder, cumin, and coriander to the skillet. Sauté for an additional 2 minutes until the spices are fragrant.
  4. Pour in enough water to barely cover the pork. Bring to a boil, then reduce the heat to low, cover, and simmer for 30 minutes.
  5. Remove the lid and continue to simmer until the liquid has evaporated and the pork is tender, about 45 minutes. Stir occasionally to prevent sticking.
  6. In a small bowl, combine the minced tomatillos, minced tomatoes, torn cilantro, and lime juice. Season with salt and pepper to taste.
  7. Warm the corn tortillas in a dry skillet or microwave.
  8. Assemble the carnitas by placing an equal amount of pork on each tortilla. Top with the cilantro tomatillo salsa.
  9. Serve immediately, garnished with additional cilantro and lime wedges if desired.
