  • 2 Medium zucchini, divided
  • 1 Red onion, minced
  • 1 10 Ounces (oz) box frozen corn, drained
  • 1 Tablespoon (tbsp) olive oil
  • 8 Flour tortillas
  • 1 Cup Monterey Jack cheese, shredded
  • 3 Tablespoons (tbsp) fresh cilantro, minced

Steps

  1. In a medium bowl, combine Worcestershire sauce, lime juice, soy sauce, and chili powder. Add shrimp and marinate for 15 minutes.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook zucchini, onion, and corn for 10 minutes or until vegetables are tender. Cover to keep warm and set aside.
