Ingredients
- 2 Tablespoons vegetable oil
- 2 Yellow onions, minced
- 1 Sweet onion, minced
- 1 Head garlic, minced
- 1 Yellow bell pepper, minced
- 1 Orange bell pepper, minced
- 2 Pounds beef stew meat, cubed
- 2 Pounds Italian sausage meat
- 4 Slices applewood smoked bacon, sliced
- 2 28 Ounces cans tomato sauce
- 2 6 Ounces cans tomato paste
- 2 14 Ounces cans black beans, drained
- 2 14.5 Ounces cans kidney beans, drained
- 1 7 Ounces can chipotle peppers in adobo sauce, minced
- 2 Cups beef broth
- 1 12 Fluid Ounces dark beer
- 1 Pinch chili powder, to taste
- 0.25 Cups dried oregano, crumbled
- 1 Tablespoon black pepper, ground
- 1 Pinch salt, to taste
- 2.5 Ounces dark chocolate candy bar
Steps
- Heat the vegetable oil in a large deep pot over medium-high heat. Add the yellow onions, sweet onion, garlic, yellow bell pepper, and orange bell pepper. Cook and stir until the onions are transparent, about 5 minutes.
- Add the cubed beef stew meat, Italian sausage meat, and bacon to the pot. Cook until the meats are evenly browned. Drain the fat.
- Stir in the tomato sauce, tomato paste, black beans, kidney beans, chipotle peppers with sauce, beef broth, beer, chili powder, oregano, black pepper, salt, and dark chocolate.
- Bring the mixture to a boil. Reduce the heat to low and let it simmer for at least 1 hour, preferably 2 hours, to allow the flavors to meld together.
