Serving Size: 5

Cooking Time: 35 minutes

Ingredients

  • 3 Cups uncooked jasmine rice
  • 3 Cups water
  • 2 Tablespoons (tbsp) sesame oil
  • 2 Cubes chicken bouillon, packaged
  • 0.5 Cups olive oil
  • 1 Whole green onion, minced
  • 2 Whole garlic cloves, mashed
  • 1 2-Inch piece fresh ginger root, mashed
  • 1 Whole chicken thigh with skin, tenderized

Steps

  1. Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.
  2. In a rice cooker, combine the rinsed rice, water, sesame oil, chicken bouillon cubes, olive oil, minced green onion, mashed garlic, and mashed ginger. Stir well to ensure the bouillon cubes are dissolved.
  3. Place the tenderized chicken thigh on top of the rice mixture, skin side up, to allow the flavors to infuse into the rice as it cooks.
  4. Turn on the rice cooker and let it cook until the rice is tender and the chicken is fully cooked, about 25 minutes.
  5. Once the rice cooker indicates that the rice is done, carefully remove the chicken thigh and set it aside.
  6. Fluff the rice with a fork, ensuring the oils and flavors are evenly distributed throughout the rice.
  7. Serve the fragrant rice in bowls, topped with slices of the cooked chicken thigh. Garnish with additional minced green onions if desired.
