Serving Size: 4
Cooking Time: 45 minutes
Ingredients
- 1 Tablespoon (tbsp) vegetable oil
- 4 Large boneless pork chops, tenderized
- 3 Tablespoons (tbsp) unsalted butter, melted
- 2 Whole sweet apples, peeled
- 1.5 Cups gorgonzola cheese, crumbled
- 0.5 Teaspoon (tsp) kosher salt
- 0.5 Teaspoon (tsp) freshly ground black pepper
- 1 Tablespoon (tbsp) fresh thyme leaves
Steps
- Preheat your oven to 375°F (190°C).
- Butterfly each pork chop by slicing horizontally through the center with a sharp knife, leaving them attached on one side to create a butterfly shape. Season both sides with salt and pepper.
- Heat the vegetable oil in a large oven-safe skillet over medium-high heat. Add the pork chops and sear for 3-4 minutes on each side until golden brown. Remove from the skillet and set aside.
- In the same skillet, melt the butter over medium heat. Add the apples and sauté for 5-7 minutes until tender. Stir in the fresh thyme and remove from heat.
- Add the crumbled gorgonzola cheese to the apple mixture, stirring gently to combine and form a creamy sauce.
- Place the seared pork chops on a baking sheet. Stuff each chop with 1/4 of the apple and cheese mixture, securing with toothpicks if necessary.
- Transfer the baking sheet to the preheated oven and bake for 10-12 minutes, or until the pork chops are cooked through and the cheese is bubbly.
- Remove from the oven and let rest for 5 minutes before serving.
- Serve hot, garnished with additional thyme if desired. Enjoy with your favorite side of potatoes or a fresh green salad.
