Serving Size: 6

Cooking Time: 30 minutes

Ingredients

  • 12 Large eggs, whisked
  • 0.25 Cups (cup) butter, softened
  • 6 Whole croissants, split
  • 12 Slices smoked ham
  • 6 Slices Colby-Jack cheese

Steps

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish with cooking spray.
  2. Pour the whisked eggs into the prepared baking dish. Bake in the preheated oven for 8 to 10 minutes, or until the eggs are set and no longer runny. Remove from the oven, allow to cool slightly, and cut into 6 equal portions.
  3. Spread softened butter on the cut sides of each croissant. Place one portion of the cooked egg onto the bottom half of each croissant.
  4. Top each egg portion with two slices of smoked ham and one slice of Colby-Jack cheese. Place the top half of the croissant over the cheese to complete the sandwich.
  5. Wrap each sandwich tightly with plastic wrap. Arrange the wrapped sandwiches on a baking sheet and freeze until solid, about 3 hours. Once frozen, store the sandwiches in a freezer-safe bag or container.
  6. To reheat, remove the plastic wrap and microwave each sandwich on High for 1 to 2 minutes, or until heated through and the cheese is melted.
