Serving Size: 6
Cooking Time: 30 minutes
Ingredients
- 12 Large eggs, whisked
- 0.25 Cups (cup) butter, softened
- 6 Whole croissants, split
- 12 Slices smoked ham
- 6 Slices Colby-Jack cheese
Steps
- Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish with cooking spray.
- Pour the whisked eggs into the prepared baking dish. Bake in the preheated oven for 8 to 10 minutes, or until the eggs are set and no longer runny. Remove from the oven, allow to cool slightly, and cut into 6 equal portions.
- Spread softened butter on the cut sides of each croissant. Place one portion of the cooked egg onto the bottom half of each croissant.
- Top each egg portion with two slices of smoked ham and one slice of Colby-Jack cheese. Place the top half of the croissant over the cheese to complete the sandwich.
- Wrap each sandwich tightly with plastic wrap. Arrange the wrapped sandwiches on a baking sheet and freeze until solid, about 3 hours. Once frozen, store the sandwiches in a freezer-safe bag or container.
- To reheat, remove the plastic wrap and microwave each sandwich on High for 1 to 2 minutes, or until heated through and the cheese is melted.
