Ingredients
- 1.5 Cups rolled oats
- 1.5 Cups pastry flour, sifted
- 1 Cup packed brown sugar
- 0.5 Cup packed brown sugar
- 0.75 Teaspoon baking soda
- 0.25 Teaspoon salt
- 0.75 Cups butter, softened
- 0.75 Pounds pitted dates, diced
- 1 Cup water
- 1 Teaspoon lemon juice
Steps
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine oats, pastry flour, 1 cup of packed brown sugar, baking soda, and salt. Mix in the softened butter until the mixture becomes crumbly.
- Press half of the crumbly mixture into the bottom of a 9-inch square baking pan to form the base.
- In a small saucepan over medium heat, combine the diced dates, water, and the remaining 0.5 cup of packed brown sugar. Bring to a boil and cook until the mixture thickens. Stir in the lemon juice and remove from heat.
- Spread the date filling evenly over the base in the baking pan.
- Sprinkle the remaining crumb mixture on top of the date filling.
- Bake in the preheated oven for 20 to 25 minutes, or until the top is lightly toasted.
- Allow the squares to cool before cutting into 12 pieces.
