  • 4 Cups fresh blueberries
  • 0.67 Cups white sugar
  • 2 Tablespoons (tbsp) all-purpose flour
  • 1 Tablespoon (tbsp) quick-cooking tapioca
  • 0.25 Teaspoon (tsp) nutmeg, ground
  • 0.25 Teaspoon (tsp) salt
  • 1 Tablespoon (tbsp) lemon zest, grated
  • 1.5 Tablespoons (tbsp) lemon juice
  • 0.5 Tablespoon (tbsp) butter

Steps

  1. Preheat the oven to 450 degrees F (230 degrees C). Line a 9-inch pie plate with the bottom pastry crust.
  2. In a large bowl, combine the sugar, flour, tapioca, nutmeg, and salt. Stir these dry ingredients into the fresh blueberries.
  3. Add the lemon juice and grated lemon zest to the blueberry mixture. Let it stand for 10 to 15 minutes to allow the flavors to meld.
  4. Mix the blueberry filling well and spoon it into the prepared pie crust. Dot the filling with small pieces of butter. Cover with the top crust, sealing the edges.
  5. Place the pie on the lowest rack in the preheated oven. Bake for 10 minutes, then reduce the oven temperature to 350 degrees F (175 degrees C).
  6. Continue baking for an additional 30 minutes, or until the crust is golden brown and the filling is bubbly.
  7. Allow the pie to cool slightly before serving. Enjoy it warm or cold.
