- 1 Tablespoon (tbsp) vegetable oil
- 1 Medium onion, minced
- 1 Medium stalk celery, minced
- 1 Clove garlic, minced
- 2 16 Ounces (oz) cans cannellini beans, drained
- 1 14 Ounces (oz) can chicken broth
- 0.25 Teaspoon (tsp) black pepper, ground
- 0.125 Teaspoon (tsp) thyme, dried
- 2 Cups water
- 1 Bunch fresh spinach, sliced
- 1 Tablespoon (tbsp) lemon juice
Steps
- In a large saucepan, heat the vegetable oil over medium heat. Add the minced onion and celery, cooking for 5 to 8 minutes until tender. Add the minced garlic and cook for an additional 30 seconds, stirring continuously.
- Stir in the drained cannellini beans, chicken broth, ground black pepper, dried thyme, and water. Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
- Using a slotted spoon, remove 2 cups of the bean and vegetable mixture from the soup and set aside.
- In a blender, blend the remaining soup in small batches until smooth. Be sure to remove the center piece of the blender lid to allow steam to escape.
- Pour the blended soup back into the stock pot and stir in the reserved beans.
- Bring the soup to a boil, stirring occasionally. Add the sliced spinach and cook for 1 minute, or until the spinach is wilted.
