Ingredients
- 0.75 Cups celery, sliced
- 0.75 Cups onion, minced
- 1 Cup white rice, uncooked
- 2 Cubes chicken bouillon
- 2.5 Cups water
- 0.5 Cups butter, melted
- 4 Tablespoons (tbsp) all-purpose flour
- 2 Cups milk
- 1.5 Cups chicken, boiled and chopped
- 1 Cup milk
- 1 Pinch black pepper, to taste
Steps
- In a large pot, combine the celery, onion, rice, chicken bouillon, and water. Cook for about 20 minutes or until most of the water is absorbed by the rice. Remove from heat.
- In a small skillet, make a cream base by combining the melted butter and flour to form a paste. Gradually add 2 cups of milk, stirring continuously to create a smooth sauce.
- Add the cream base to the rice mixture in the pot. Stir in the chopped chicken and an additional 1 cup of milk. If the soup is too thick, add more milk to reach the desired consistency.
- Season with ground black pepper to taste and serve hot.
