Ingredients

  • 0.5 Medium head cabbage, torn
  • 4 Large carrots, cubed
  • 1 Whole sweet onion, minced
  • 4 Stalks celery, cubed
  • 0.75 Cups ketchup
  • 1.5 Cups tomato-vegetable juice cocktail
  • 3 Cups vegetable broth
  • 1 14.5 Ounces (oz) chicken broth
  • 1 14.5 Ounces (oz) can peeled tomatoes, diced

Steps

  1. Place the torn cabbage into an 8-quart soup pot.
  2. Microwave the cubed carrots in 2 tablespoons of water for 6 minutes on high.
  3. Microwave the cubed celery in 2 tablespoons of water for 4 minutes on high.
  4. Add the microwaved vegetables to the pot. Add the minced sweet onion, cubed celery, and ketchup.
  5. Pour in the juice cocktail, vegetable broth, chicken broth, and diced tomatoes. Fill each can with water and add the water to the mixture. Cover and bring to a boil. Continue boiling for 30 minutes.
  6. Reduce the heat to simmer and cook for 2 to 3 hours.
  7. Serve with slices of a French baguette. Have 1 pinch each of salt, black pepper, and Tabasco available to season to taste at the table.
