- 3 Cups (cups) cabbage, shredded
- 2 Cups (cups) potatoes, sliced
- 1 Teaspoon (tsp) cream
- 1 Teaspoon (tsp) unsalted butter
- 1 Small yellow onion, minced
- 2 Whole garlic cloves, minced
- 0.5 Teaspoons (tsp) thyme, dried
- 0.5 Teaspoons (tsp) black pepper, ground
- 0.5 Teaspoons (tsp) kosher salt
- 1 Pinch salt, to taste
- 1 Pinch pepper, to taste
- 1 Tablespoon (tbsp) fresh parsley, minced
Steps
- In a large stockpot, heat the butter over medium heat. Add the minced onion and minced garlic, sautéing until the onion is translucent and fragrant, about 3-4 minutes.
- Add the chicken stock, ham hock, shredded cabbage, and sliced potatoes to the pot. Stir in the dried thyme, ground black pepper, and kosher salt.
- Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 30 minutes, or until the potatoes are tender.
- Carefully remove the ham hock from the pot. Separate the meat from the bone, discarding the bone, and shred the meat. Return the shredded ham to the soup.
- Stir in the cream to add a creamy finish to the soup. Adjust seasoning with additional salt and pepper to taste.
- Serve hot, garnished with freshly minced parsley for a burst of color and flavor.
