- 1 Pound (lb) beef sausage, divided
- 1 Medium onion, minced
- 2 Cups fresh mushrooms, sliced
- 0.25 Cups olive oil
- 2 6 Ounces (oz) cans tomato paste
- 1 46 Fluid Ounces (fl oz) can tomato juice
- 1 16 Ounces (oz) can crushed tomatoes
- 1 Cup Burgundy wine
- 1.5 Tablespoons (tbsp) dried oregano
- 1 Tablespoon (tbsp) dried basil
- 2 Tablespoons (tbsp) dried parsley
- 1 Tablespoon (tbsp) garlic, minced
- 2 Tablespoons (tbsp) garlic salt
- 0.5 Cups white sugar
- 2 Pounds (lb) spaghetti
Steps
- Preheat the oven to 350 degrees F (175 degrees C). Cook the sausage for 30 minutes. Cut into bite-sized pieces and set aside.
- In a Dutch oven, sauté the onion and mushrooms in olive oil until tender. Remove with a slotted spoon and set aside.
- Stir into the Dutch oven: tomato paste, tomato juice, crushed tomatoes, and wine. Stir until smooth.
- Mix in oregano, basil, parsley, minced garlic, garlic salt, and sugar.
- Return the divided sausage and the onion-mushroom sauté to the sauce. Bring to a boil. Reduce heat and simmer for at least 3 hours. Cover the pot if the sauce becomes too thick.
- Cook the pasta according to package directions. Drain.
- Serve the sauce over the pasta.
