Ingredients
- 1 Pound (lb) dry lima beans
- 4 Cups water
- 5 Medium carrots, minced
- 1 Medium leek, minced
- 2 Tablespoons (tbsp) shallots, minced
- 2 Stalks celery, minced
- 4 Cubes vegetable bouillon
- 8 Cups water
- 2 Tablespoons (tbsp) olive oil
Steps
- Bring 4 cups of water to a boil. Add dry lima beans, and boil for 2 to 3 minutes. Remove from heat, cover, and let the beans sit for 1 to 2 hours to soften. Drain and rinse until the water runs clear, discarding the bean water.
- In a soup pot, sauté the carrots, leek, shallots, and celery in olive oil until the onions and celery are translucent. Add the lima beans and sauté for another 2 to 3 minutes.
- Meanwhile, bring 4 cups of water to a boil. Add the vegetable bouillon cubes to the boiling water and stir until dissolved.
- Add the prepared broth to the sautéed vegetables and beans. Pour in the remaining 8 cups of water.
- Allow the soup to simmer over a low flame for 1 to 1 1/2 hours. Serve steaming hot.
