  • 1 Pound (lb) ground turkey
  • 0.5 Cups onion, minced
  • 1 Stalk celery, minced
  • 1 Clove garlic, minced
  • 1 Teaspoon (tsp) crumbled dried thyme
  • 0.75 Teaspoons (tsp) poultry seasoning
  • 0.5 Cups chicken stock
  • 0.5 Cups hot milk
  • 1 Tablespoon (tbsp) all-purpose flour
  • 1 Dash Worcestershire sauce
  • 1 Dash browning sauce
  • 1.33 Cups herb-seasoned stuffing mix
  • 1 Cup peas
  • 0.75 Cup corn
  • 0.5 Teaspoon (tsp) crumbled dried thyme
  • 1 Teaspoon (tsp) ground nutmeg

Steps

  1. Preheat oven to 375°F (190°C). Lightly grease a 2-quart, deep-dish casserole pan.
  2. Place sweet potatoes, russet potato, and carrots in separate saucepans. Cover with water, bring to a boil, and cook until tender (5-7 minutes). Drain and set carrots aside.
  3. In a large mixing bowl, mash the drained sweet and russet potatoes. Add egg substitute and sour cream. Blend with an electric mixer until smooth and fluffy. Season with salt and pepper. Set aside.
  4. Heat olive oil in a large skillet over medium heat. Cook turkey until browned (4-5 minutes). Add onion, celery, garlic, 1 teaspoon thyme, and poultry seasoning. Cook until turkey is no longer pink.
  5. Increase heat to medium-high. Add chicken stock to turkey mixture. Whisk hot milk and flour until smooth, then add to boiling stock. Stir until thickened. Remove from heat and stir in Worcestershire and browning sauces.
  6. Pour turkey mixture into the prepared casserole dish. Sprinkle stuffing mix over turkey. Arrange carrots, peas, and corn on top. Season with thyme, salt, and pepper. Spoon potato mixture over vegetables, spreading to cover edges. Sprinkle with nutmeg.
  7. Bake in preheated oven until the top is slightly browned, about 35 minutes. Allow to rest for 30 minutes before serving.
