- 1 Medium leek, sliced
- 2 Medium carrots, minced
- 1 Medium zucchini, sliced
- 4 Ounces green beans, divided
- 2 Stalks celery, sliced
- 1.5 Quarts vegetable stock
- 1 Pound tomatoes, chopped
- 1 Tablespoon fresh thyme, minced
- 1 15 Ounces can cannellini beans
- 0.25 Cups elbow macaroni
- 1 Pinch salt, to taste
- 1 Pinch ground black pepper, to taste
Steps
- Heat the olive oil in a large saucepan over medium heat. Add the leek, carrots, zucchini, green beans, and celery. Cover, reduce the heat to low, and cook for 15 minutes, shaking the pan occasionally.
