  • 1 Pound (lb) pork, ground
  • 2 Tablespoons (tbsp) olive oil
  • 2 Medium onions, minced
  • 5 Cloves garlic, minced
  • 2 4 Ounces (oz) cans diced green chiles
  • 2 Teaspoons (tsp) cumin, ground
  • 1 Teaspoon (tsp) oregano, dried
  • 4 Cups chicken broth
  • 1 14.5 Ounces (oz) can great northern beans, drained
  • 2 Cups Monterey Jack cheese, shredded

Steps

  1. Heat a large skillet over medium-high heat. Cook and stir the ground pork until browned and crumbly, about 5 to 7 minutes. Drain and discard the grease.
  2. In a large stockpot, heat olive oil over medium heat. Add minced onions and garlic; sauté until onions are transparent, approximately 5 minutes.
  3. Stir in diced green chiles, ground cumin, and dried oregano; cook and stir until fragrant, about 2 to 3 minutes.
  4. Add chicken broth, cooked pork, and drained beans to the pot; bring to a boil. Reduce the heat and simmer, uncovered, for 20 minutes.
