Ingredients
- 2 Pounds (lb) ground beef
- 12 Ounces (oz) package smoked sausages, sliced
- 9 Slices bacon, diced
- 2 Tablespoons (tbsp) garlic, minced
- 2 Medium onions, minced
- 6 Ounces (oz) can tomato paste
- 14 Ounces (oz) can beef broth
- 28 Ounces (oz) can diced tomatoes
- 15 Ounces (oz) can mild chili beans, packaged
- 30 Ounces (oz) cans pinto beans, drained
- 3 Anaheim chile peppers, minced
- 3 Jalapeno peppers, minced
- 3 Serrano peppers, minced
- 3 Tablespoons (tbsp) Worcestershire sauce
- 0.33 Cups brown sugar
- 2 Teaspoons (tsp) chipotle chile powder
- 2 Teaspoons (tsp) cumin, ground
- 1 Pinch salt, to taste
- 1 Pinch pepper, to taste
Steps
- Brown the ground beef in a large soup pot over medium-high heat until cooked and crumbly; drain and set aside. Brown the sausages, then set aside.
- Reduce heat to medium and stir in the bacon. Cook until the bacon has released its fat and is beginning to turn crispy.
- Stir in the garlic and onions, and cook until the onions soften and turn translucent, about 5 minutes. Stir in the tomato paste to coat the onions.
- Pour in the beef broth, diced tomatoes, chili beans, and pinto beans. Add the Anaheim peppers, jalapeno peppers, and serrano peppers.
- Season with Worcestershire sauce, brown sugar, chipotle powder, and cumin. Bring to a boil over high heat, then reduce heat to medium-low, and simmer for 2 hours, or until thickened, stirring occasionally.
- Season to taste with salt and pepper, then simmer for 5 additional minutes before serving.
