Cooking Time: 270 minutes

Ingredients

  • 2 Cups (cups) coarse kosher salt
  • 4 Pounds (lbs) prime rib roast
  • 1 Tablespoon (tbsp) black pepper, ground
  • 1 Tablespoon (tbsp) seasoning salt
  • 2 Tablespoons (tbsp) fresh rosemary, minced
  • 4 Whole garlic cloves, minced
  • 1 Tablespoon (tbsp) olive oil

Steps

  1. Preheat your oven to 210 degrees F (100 degrees C).
  2. In a small bowl, combine the minced rosemary, minced garlic, and olive oil to form a paste. Rub this mixture evenly over the prime rib roast.
  3. Cover the bottom of a roasting pan with a layer of kosher salt.
  4. Place the roast, bone side down, on the salt. Season the meat with ground black pepper and seasoning salt.
  5. Completely cover the roast with the remaining kosher salt, ensuring an even layer.
  6. Place the pan in the preheated oven and roast for 4 to 5 hours, or until the internal temperature of the meat reaches 145 degrees F (63 degrees C) for medium-rare.
  7. Remove the roast from the oven and let it rest for 30 minutes. This allows the juices to redistribute, making the roast easier to carve.
  8. Carefully remove all the salt crust from the roast before slicing.
  9. Slice the roast and serve immediately, enjoying the tender, flavorful meat.
