Ingredients

  • 2 6 Ounces (oz) boneless salmon fillets
  • 1 Tablespoon (tbsp) fresh basil, minced
  • 1 Medium tomato, sliced
  • 1 Tablespoon (tbsp) olive oil
  • 2 Tablespoons (tbsp) Parmesan cheese, grated
  • 0.5 Teaspoons (tsp) kosher salt
  • 0.25 Teaspoons (tsp) black pepper, ground
  • 1 Teaspoon (tsp) lemon, zested
  • 1 Clove garlic, minced

Steps

  1. Preheat your oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil and lightly coat it with cooking spray or a thin layer of olive oil.
  2. Pat the salmon fillets dry with a paper towel. Season both sides with kosher salt and black pepper. Place the fillets skin-side down on the prepared baking sheet.
  3. In a small bowl, combine the basil, lemon zest, and garlic. Sprinkle this mixture evenly over the top of the salmon fillets.
  4. Arrange the tomato slices over the herb-topped salmon. Drizzle with olive oil and sprinkle the Parmesan cheese evenly over the top.
  5. Place the baking sheet in the preheated oven and bake for about 20 minutes, or until the salmon is opaque in the center and the Parmesan is lightly browned and crisp.
  6. Remove from the oven and let rest for a couple of minutes. Serve the salmon fillets with your choice of sides, such as sautéed spinach or a light pasta dish, and enjoy with a glass of Pinot Noir.
