Ingredients
- 8 Ounces (oz) package manicotti pasta
- 1 Pound (lb) lean ground beef
- 1.5 Cups cottage cheese, drained
- 2 Cups mozzarella cheese, shredded
- 0.5 Cups Parmesan cheese, grated
- 2 Large egg whites
- 0.5 Teaspoon (tsp) oregano, dried
- 0.5 Teaspoon (tsp) basil, dried
- 0.5 Teaspoon (tsp) garlic powder
- 0.5 Teaspoon (tsp) onion powder
- 0.25 Teaspoon (tsp) black pepper, ground
- 32 Ounces (oz) jar spaghetti sauce
- 2 Tablespoons (tbsp) olive oil
- 1 Small yellow onion, minced
- 2 Whole garlic cloves, minced
- 0.5 Teaspoon (tsp) kosher salt
Steps
- Preheat your oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add the manicotti pasta and cook for 8 to 10 minutes until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.
- In a large skillet, heat olive oil over medium heat. Add the minced onion and minced garlic, sautéing until the onion is translucent.
- Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned. Drain excess fat and let it cool slightly.
- In a large mixing bowl, combine the cooked beef, cottage cheese, 1 cup of shredded mozzarella cheese, grated Parmesan cheese, egg whites, oregano, basil, garlic powder, onion powder, black pepper, and kosher salt. Mix until well combined.
- Carefully stuff each manicotti shell with the beef and cheese mixture.
- Lightly grease a 9x13 inch baking dish. Pour enough spaghetti sauce to cover the bottom of the dish. Arrange the stuffed manicotti in a single layer over the sauce.
- Pour the remaining spaghetti sauce over the manicotti, ensuring they are well covered. Sprinkle the remaining 1 cup of shredded mozzarella cheese on top.
- Cover the dish with aluminum foil and bake in the preheated oven for 40 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Let the manicotti rest for 5 minutes before serving. Enjoy your savory herb-infused beef manicotti with a side of fresh salad.
