- 1 Pound (lb) lean beef chuck, tenderized
- 2 Tablespoons (tbsp) all-purpose flour
- 2 Teaspoons (tsp) vegetable oil
- 2 Whole onions, sliced
- 2 Cups fresh mushrooms, sliced
- 2 Cloves garlic, minced
- 2 Teaspoons (tsp) tomato paste
- 2 Cups beef broth
- 4 Cups carrots, sliced
- 2 Whole russet potatoes, sliced
- 1 Cup fresh green beans, torn
- 1 Tablespoon (tbsp) cornstarch
- 1 Tablespoon (tbsp) cold water
- 0.25 Cup parsley, minced
Steps
- Coat the beef cubes with flour, shaking off any excess. In a large nonstick stock pot, heat the vegetable oil over medium-high heat. Add the beef and sauté until browned, approximately 6 minutes. Remove the beef from the pot and set aside.
- Add the sliced onions and mushrooms to the stock pot and sauté for 6 minutes. Add the minced garlic and sauté for an additional minute, stirring continuously.
- Skim off any fat from the stock pot and return the cooked beef to the pot. Stir in the tomato paste and beef broth. Add enough water to just cover the ingredients and bring to a boil. Reduce the heat to low and simmer until the beef is tender, about 1 hour and 15 minutes.
- Skim off any foam that has accumulated on the surface of the stew. Add the sliced carrots, potatoes, and torn green beans. Cover partially and simmer for 15 minutes.
- In a small mixing bowl, combine the cornstarch and cold water. Stir the mixture into the stew. Increase the heat and boil uncovered for 1 minute. Sprinkle with minced parsley and serve hot.
