Ingredients

  • 3 Tablespoons (tbsp) butter
  • 0.75 Cups yellow onion, minced
  • 0.5 Cups tart apple, peeled
  • 0.25 Cups celery, minced
  • 1 Pound (lb) ground pork
  • 0.5 Pound (lb) ground seasoned pork sausage
  • 0.5 Cups fresh bread crumbs
  • 0.5 Cups parsley, minced
  • 1.5 Teaspoons (tsp) kosher salt
  • 1.5 Teaspoons (tsp) black pepper, ground
  • 0.5 Teaspoons (tsp) dried sage
  • 9 Pounds (lb) crown pork roast

Steps

  1. Preheat your oven to 350°F (175°C). Place a rack in a shallow roasting pan.
  2. In a large skillet, melt the butter over medium heat until the foam subsides. Add the minced onion and sauté for about 5 minutes until translucent. Stir in the peeled apple and minced celery, and continue to sauté for another 5 minutes without browning. Transfer the mixture to a large mixing bowl.
  3. To the onion mixture, add the ground pork, sausage, bread crumbs, minced parsley, kosher salt, ground black pepper, and dried sage. Mix gently but thoroughly. To check seasoning, fry a small ball of stuffing in the skillet until the pork is cooked through. Adjust seasoning if necessary.
  4. Fill the center of the crown roast with the stuffing, mounding it slightly. Cover the stuffing with a round of aluminum foil. Wrap the ends of the chop bones with strips of foil to prevent charring. Place the crown on the rack in the prepared pan.
  5. Roast the pork in the center of the preheated oven for about 3 hours. Remove the foil from the stuffing 30 minutes before the pork is done to allow the top to brown. An instant-read thermometer inserted into the center of the meat near the bone should read at least 145°F (63°C).
  6. Carefully transfer the pork to a large, heated, circular platter. Remove the foil from the ends of the chops and replace them with paper frills for presentation. Let the pork rest for about 10 minutes before carving and serving.
  7. To carve, insert a large fork in the side of the crown to steady it, then use a large, sharp knife to cut down through each rib to detach the chops. Serve two chops per person with a generous serving of stuffing.
