Ingredients

  • 3 Cups (cups) water
  • 1 0.7 Ounces (oz) package Italian-style salad dressing mix, packaged
  • 1 Teaspoon (tsp) dried oregano
  • 1 Teaspoon (tsp) dried basil
  • 1 Teaspoon (tsp) dried parsley
  • 1 Teaspoon (tsp) onion powder
  • 1 Teaspoon (tsp) garlic powder
  • 1 Whole bay leaf
  • 1 Teaspoon (tsp) salt
  • 1 Teaspoon (tsp) black pepper, ground
  • 1 5 Pounds (lb) rump roast
  • 1 Cup (cup) red wine
  • 4 Beef bouillon cubes, packaged
  • 4 Cups (cups) beef broth
  • 1 Tablespoon (tbsp) Italian herbs
  • 0.5 6 Ounces (oz) jar pepperoncini, sliced
  • 2 Whole red bell peppers, sliced
  • 8 Ounces (oz) mushrooms, sliced
  • 10 Whole crusty rolls
  • Optional: Provolone cheese slices

Steps

  1. In a saucepan, combine water, Italian-style salad dressing mix, oregano, basil, parsley, onion powder, garlic powder, bay leaf, salt, and black pepper. Stir well and bring to a boil.
  2. Add red wine, beef bouillon cubes, and beef broth to the saucepan. Stir until the bouillon cubes are dissolved.
  3. Place the rump roast in a slow cooker. Pour the hot herb and broth mixture over the meat.
  4. Add half of the juice from the pepperoncini jar to the slow cooker.
  5. Cover and cook on Low for 10 to 12 hours, or on High for 4 to 5 hours.
  6. At the 10-hour mark (if cooking on Low), add the sliced pepperoncini, red bell peppers, and mushrooms to the slow cooker.
  7. Once cooked, remove the bay leaf and shred the beef with a fork.
  8. Serve the shredded beef on crusty rolls, topped with some of the hot gravy and optional provolone cheese. For an extra touch, broil the sandwiches for a few minutes to melt the cheese.
