  • 0.5 Teaspoons (tsp) anise seed
  • 0.5 Teaspoons (tsp) parsley flakes, dried
  • 0.5 Teaspoons (tsp) red pepper flakes
  • 0.5 Teaspoons (tsp) cayenne pepper
  • 0.25 Teaspoons (tsp) onion, minced
  • 0.125 Teaspoons (tsp) coriander seed, ground
  • 0.125 Teaspoons (tsp) mace, ground
  • 2 Pounds (lb) turkey breast, ground
  • 1 Pound (lb) pork, ground

Steps

  1. In a large mixing bowl, pour the chilled red wine. Whisk in the raw sugar and sea salt until fully dissolved.
  2. Gradually add the garlic powder, ground black pepper, paprika, fennel seed, dried oregano, anise seed, parsley flakes, red pepper flakes, cayenne pepper, minced onion, coriander seed, and ground mace. Stir until the spices are well combined.
  3. Add the ground turkey and ground pork to the bowl. Using your hands, mix the meat and spices thoroughly until evenly distributed.
  4. Line 2 or 3 baking sheets with plastic wrap. Shape the meat mixture into 1/4 cup balls, then flatten each into 1/2-inch thick patties. Arrange them in a single layer on the prepared baking sheets.
  5. Cover the baking sheets with plastic wrap and freeze the patties until solid.
  6. Once frozen, transfer the patties into a resealable plastic bag for storage in the freezer. Use as needed in your favorite recipes.
