  • 6 Large onions, minced

  • 9 Cups whole milk

  • 1 Teaspoon (tsp) hot sauce (optional)
  • 1 Pinch salt, to taste
  • 1 Pinch freshly ground black pepper, to taste
  • 3 Cups reserved cooking liquid from potatoes and onions

Steps

  1. In a large pot over high heat, combine the cubed potatoes and minced onions. Add enough water to cover the vegetables and bring to a boil. Cook for 30 to 45 minutes, or until the potatoes are tender. Drain the mixture, reserving 3 cups of the cooking liquid.
  2. Transfer the cooked potatoes and onions in small batches to a blender, adding some of the reserved cooking liquid, and puree until smooth. Set aside.
  3. In the same pot over medium heat, melt the butter. Add the flour and stir continuously to form a roux, cooking for about 2 minutes until it turns a light golden color.
  4. Gradually whisk in the milk, ensuring there are no lumps. Continue to stir until the mixture thickens slightly.
  5. Reduce the heat to low and add the pureed potato and onion mixture to the pot. Stir well to combine.
  6. Add the minced parsley, garlic powder, marjoram, and hot sauce (if using). Season with salt and freshly ground black pepper to taste.
  7. Let the soup simmer gently for 5 to 10 minutes, stirring occasionally to prevent sticking.
