Ingredients

  • 9 Whole Yukon Gold potatoes, peeled
  • 0.5 Cups (c) vegetable oil
  • 0.25 Cups (c) tarragon vinegar
  • 0.25 Cups (c) vegetable broth
  • 0.25 Cups (c) green onions, minced
  • 2 Tablespoons (tbsp) fresh parsley, minced
  • 1 Teaspoon (tsp) salt
  • 1 Teaspoon (tsp) black pepper, ground

Steps

  1. Bring a large pot of salted water to a boil. Add the Yukon Gold potatoes and cook until they are tender but still firm, about 15 minutes.
  2. Drain the potatoes and transfer them to a large bowl. Allow them to cool slightly, then peel and slice them into the bowl.
  3. In a small bowl, combine the vegetable oil, tarragon vinegar, vegetable broth, green onions, parsley, salt, and ground black pepper.
  4. Gently toss the warm potatoes with the prepared dressing until well coated.
  5. Serve the potato salad at room temperature, or cover and chill it in the refrigerator before serving. Enjoy!
