  • 2 - 15 Ounces (oz) cans chili beans, packaged
  • 2 - 14 Ounces (oz) cans black beans, packaged
  • 2 - 15.5 Ounces (oz) cans black-eyed peas, packaged
  • 1 - 28 Ounces (oz) can diced tomatoes, packaged
  • 2 - Pounds (lb) lean ground beef, ground
  • 1 - Pound (lb) hot Italian sausage
  • 2 - Large green bell peppers, minced
  • 1 - Large red bell pepper, minced
  • 6 - Small yellow onions, minced
  • 1 - Red onion, minced
  • 6 - Cloves garlic, minced
  • 1 - 4 Ounces (oz) can jalapeno peppers, minced
  • 1 - 7 Ounces (oz) can chipotle chiles in adobo sauce, minced
  • 6 - Serrano peppers, minced
  • 4 - Orange habanero chili peppers, minced
  • 1 - Banana pepper, minced
  • 3 - Cherry peppers, minced
  • 1 - Anaheim pepper, minced
  • 4 - Red Thai chili peppers, minced
  • 4 - Green Thai chili peppers, minced
  • 2 - Tablespoons (tbsp) chili powder
  • 1.5 - Tablespoons (tbsp) ground cumin
  • 3 - Tablespoons (tbsp) red pepper flakes
  • 0.33 - Envelope taco seasoning mix
  • 1 - Pinch cayenne pepper, to taste
  • 1 - Pinch salt, to taste
  • 1 - Pinch ground black pepper, to taste

Steps

  1. In a large, heavy pot, combine the kidney beans, chili beans, black beans, and black-eyed peas. Simmer over medium heat.
  2. In a skillet over medium-high heat, cook the ground beef and sausage until crumbly and evenly browned, about 10 minutes. Drain and stir into the bean mixture.
  3. Add the red and green bell peppers, yellow and red onions, and garlic on top of the bean and meat mixture. Cover and steam for at least 10 minutes.
  4. Stir in the jalapeno, chipotle, serrano, habanero, banana, cherry, and Anaheim peppers, along with the red and green Thai chilies, chili powder, cumin, red pepper flakes, and taco seasoning.
  5. Season to taste with cayenne pepper, salt, and black pepper. Cover and simmer over medium heat, stirring occasionally, for 3 hours.
