  • 3 Cups (C) water
  • 0.7 Ounces (oz) package dry Italian-style salad dressing mix, packaged
  • 1 Teaspoon (tsp) dried oregano
  • 1 Teaspoon (tsp) dried basil
  • 1 Teaspoon (tsp) dried parsley
  • 1 Teaspoon (tsp) onion powder
  • 1 Teaspoon (tsp) garlic powder
  • 1 Whole bay leaf
  • 1 Teaspoon (tsp) salt
  • 1 Teaspoon (tsp) ground black pepper
  • 5 Pounds (lb) rump roast
  • 1 Cup (C) red wine
  • 4 Whole beef bouillon cubes, packaged
  • 4 Cups (C) beef broth
  • 1 Tablespoon (tbsp) Italian herbs, dried
  • 6 Ounces (oz) pepperoncini, sliced
  • 2 Whole red bell peppers, sliced
  • 8 Ounces (oz) mushrooms, sliced
  • 10 Whole crusty rolls

Steps

  1. In a saucepan, combine water, Italian-style salad dressing mix, oregano, basil, parsley, onion powder, garlic powder, bay leaf, salt, and black pepper. Stir well and bring to a boil.
  2. Add red wine, beef bouillon cubes, and beef broth to the saucepan. Stir until the bouillon cubes are dissolved.
  3. Place the rump roast in a slow cooker. Pour the hot herb mixture over the meat.
  4. Cover and cook on Low for 10 to 12 hours, or on High for 4 to 5 hours.
  5. At the 10-hour mark (or 4-hour mark on High), add sliced pepperoncini, red bell peppers, and mushrooms to the slow cooker.
  6. Once cooked, remove the bay leaf. Shred the beef with a fork and mix it with the vegetables and some of the hot gravy.
  7. Serve the shredded beef and vegetables on crusty rolls. Optionally, top with provolone cheese and broil for a few minutes until the cheese is melted and bubbly.
